A year to the day and myself, my husband and our two children were midway through our 10th Wedding Anniversary trip of a lifetime to Sri Lanka and now this incredibly beautiful and captivating little country is in mourning.
My kids expect everything in an instant (or at least the very next day from Amazon Prime!) Questions like, "can I have this?", "can we order it online?" and my favourite, "can we go to the shops and get me some new trainers?" (at 8pm!?) This whole lifestyle with no patience and everything is available at the click of a button suddenly started to take over my life. That and the constant screen time.

Fun fact. I used to be married to a chef. My role when we entertained was to help with the presentation. I wasn’t much of a sous chef, but I did pick up a few tips along the way. Luckily this is a simple salad that needs no qualifications to create! It tastes amazing and looks good too!
Whilst on holiday in Turkey, menemen omelette was one of my favourite meals to have at lunch. I’ve recreated a healthy alternative with only 200 calories per serving and Evelyn loves it too! It’s a perfect lunch that you can make the night before and warm at work- or a quick, easy and delicious tea!
I had a bit of a late awakening when it came to halloumi. For years, all I knew about it was that it squeaked. Squeaking cheese? No, I’ll pass, thanks.
