RECIPE | Soy & Garlic Chicken with Sweet Potato Chips
This recipe came about when I raided the cupboard a year or so ago and realised I didn’t have much in! What I did have was garlic, fresh chillies, soy sauce and chicken.
It’s a delicious meal that even my kids love (if I don’t put too many chilies in). Takes about 5 minutes to prepare and 20 minutes to cook.
What you need (to feed 2 x adults)
2 skinned and chopped chicken breasts
2 x garlic cloves, finely chopped
Fresh finely chopped chillies (I use 2 or 3 red chillies, but I like it quite spicy)
Extra virgin olive oil
Dark soy sauce
1 x large sweet potato
Pre-heat your oven to 180 degrees.
In a medium sized dish, put a decent glug of olive oil and an equivalent glug of the soy sauce. Mix together and add in your chopped chicken breasts. You should have enough of the oil and soy to almost cover your chicken.
Add in your garlic and fresh chillies and stir and put to one side.
Wash and pat dry your sweet potato (no need to peel) and slice into chips approx 1cm in width. Tip: Try to keep your chips all roughly the same size so they cook at the same rate.
Heat a few glugs of olive oil in a baking tray and add your sweet potato chips. Stir around to ensure all your chips are covered in oil and season well with salt and pepper and put in the oven. Check and turn your chips over after around 10 minutes. Remove from the oven after around 20 minutes or when cooked through.
Whilst your chips are cooking, heat a large frying pan and add in your chicken, chillies, garlic and oil. Cook for 15-20 minutes of until the chicken is thoroughly cooked through.
Remove the chicken from the oil and serve with your sweet potato chips. Use a few spoonfuls of the oil, soy, garlic and chill from the pan to drizzle over your chicken and sweet potato chips. I usually also serve with either a salad or green veg, like broccoli or green beans, so use the delicious oil to drizzle over as a salad dressing and garnish for your vegetables.
